The iCloud settings you listed are for syncing, not backups. They are two different things. Syncing allows you to make changes on the data on your phone and have those changes reflected on a computer or other iOS device syncing with the same iCloud account. You can also choose to back up your phone to iCloud, which is enabled in iTunes (by checking to do so on the Info tab of your iTunes sycn settings, syncing your phone, and turning on iCloud backups on your phone in Settings>iCloud>Storage & Backup>iCloud Backup). The backup you make to iCloud will be the same as the one that is made in iTunes.
